Ingredients (US & METRIC):
30g/ 3/4 cup dried porcini mushroom 3 tbsp olive oil 1 small onion, finely chopped 1 carrot, finely chopped 1 stick celery, finely chopped 2 cloves garlic, bashed 2 large skin on chicken thighs, finely chopped 2 skin on chicken breasts, finely chopped Good pinch chilli flakes 200ml/ 1 cup white wine 200ml/ 6 fl oz fresh chicken stock 4 sprigs fresh oregano, leaves stripped 50ml/ ¼ cup double cream 50g/ ½ cup grated parmesan 400g/ 2 cups fresh penne pasta Sea salt & freshly ground pepper
