Looking for the perfect holiday cocktail recipe to celebrate the New Year? This festive & refreshing spritz is ideal for serving to guests if you're celebrating at home, and the recipe is so simple!

Ingredients (US & METRIC):

For the spiced simple syrup:
200g/ 3/4 cup sugar
250ml/ 1 cup water
2 whole cloves
1 cinnamon stick
2 star anise
3 peels of orange

For the spritz:
4 handfuls ice
150ml/ 2/3 cup Campari
100ml/ 1/2 cup pomegranate juice
300ml prosecco or sparkling wine
2 oranges, peeled to garnish
4 sprigs mint

Method:

1. Place all the ingredients for the simple syrup in a small saucepan and place over a medium high heat and bring to a steady simmer. Simmer for 10 minutes until slightly thickened. Allow to cool and set aside in a resealable jar. Store in the fridge for up to a week.
2. Fill 4 glasses with ice.
3. In a large shaker, combine the campari, pomegranate juice and four tablespoons of the cooled simple syrup with a handful of ice. Shake vigorously for 2 minutes and then divide and strain into the prepared glasses.
4. Top with prosecco and garnish with orange peel and mint sprigs.
