Moist chocolate spice cake with a rich ganache -


1 1/3 c flour
1 ¾ c sugar
¼ c cocoa
2 t baking soda
1 t salt
1 t cayenne pepper
3 t cinnamon
1 T & 1 ½ t instant espresso
2 eggs
1 c buttermilk
1 c canola oil
1 ½ t vanilla extract
¾ c boiling water
2 c heavy cream
3 ½ c milk chocolate


1. Preheat 350

2. In a large bowl whisk together flour, sugar, cocoa powder, baking soda, salt, cayenne pepper, cinnamon, and instant espresso.

3. In a mixer add eggs, buttermilk, canola oil, and vanilla extract.

4. Add dry mix one cup at a time until well incorporated.

5. Carefully add boiling water.

6. Prepare 2-6” pans and 2-8” with baking spray & parchment paper circles.

7. Bake cake for 20-30 mins or until a toothpick comes out clean.

8. In a saucepan bring heavy cream to a boil.

9. Add chocolate chips to a heat-resistant bowl.

10. Carefully pour heavy cream over chocolate chips and let sit for about 3 minutes.

11. Stir ganache till smooth and no more chocolate chips lumps are showing.

12. Once cakes are cooled and ready, frost with ganache and enjoy.
