Chocolate Sweet Cake with Cherry Almond Compote Recipe -

Chocolate Cake:
INGREDIENTS
1 sticks butter
1 c water
½ c canola oil
½ c buttermilk
1 t baking soda
2 eggs
2 c flour
2 c sugar
½ t salt
⅓ c cocoa
1 t vanilla
INSTRUCTIONS
Preheat oven to 350
In a saucepan combine butter, water, and oil. Bring to a boil.
Remove from heat and let cool
In a small bowl combine buttermilk and baking soda. Set aside.
In a stand mixer beat eggs.
In a large bowl combine flour, sugar, salt, and unsweetened cocoa with a whisk.
Add mixture from saucepan to the dry mixture.
Add buttermilk, eggs, and vanilla to the large bowl.
Whisk together but don't over mix.
Pour evenly into 2- 6” pans and 2-8” pans.
Bake for 25-30 mins

Cherry Compote
INGREDIENTS
3 c frozen cherries
⅔ c sugar
1 t cornstarch
1 T water
¼ t almond extract
INSTRUCTIONS
Use Food processor and pulse cherries.
Add cherries and sugar to a saucepot.
In a small bowl make a slurry with water and cornstarch.
Add cornstarch to the cherry mixture.
Cook over medium heat stirring occasionally
When sauce begins to thicken add almond extract
Remove from heat and let cool before adding to cake layers"
