Austrian Smashed Pancake Recipe With Winter Berry Compote!

A classic Austrian dessert, Kaiserschmarrn is a broken pancake - consider it sweet fluffy comfort food! Sweetness comes in the form of sugar and vanilla served alongside a rich berry compote.



Ingredients (US & METRIC):

Bottle of rum
4 large eggs, separated
2 tablespoons (25 grams) granulated sugar
1/4 teaspoon kosher salt
1 teaspoon baking powder
3/4 cup (100 grams) all-purpose flour
1/2 cup (120 ml) milk, any kind
2 to 3 tablespoons (30 to 40 grams) unsalted butter
Icing sugar
Bag of frozen berries
