I wanted to sneak in a Mother’s Day friendly video recipe before the big day, but instead of something new and exciting, and decided to go with something old and exciting, in the form of this Dutch Baby experiment. Well, it’s actually three Dutch Baby experiments, so maybe this is new and exciting after all. Enjoy!

There will be no fully formatted, printable, written recipe on Allrecipes for this experiment, but here are the ingredients and basic instructions:

Ingredients for 1 Oat Milk Dutch Baby:
2 large eggs
1/4 teaspoon vanilla
1/4 teaspoon kosher salt, or 1/8 teaspoon fine salt
1/4 cup all-purpose flour
1/3 cup oat milk
- Place in cold oven and set heat to 500 F. and timer to 25 minutes. Start checking at 20 minutes, but let bake until very well-browned before removing. Serve immediately.

For the Strawberry and Rhubarb topping (Makes enough for 2 Dutch Babies):
1 1/2 cups quartered strawberries, rinsed and drained
3 tablespoons sugar, divided
1/2 teaspoon lemon zest
1 tablespoon freshly squeezed lemon juice
1/2 cup sliced rhubarb
1/4 cup water
- Macerate strawberries with 1 tablespoon of the sugar, plus the lemon zest and juice.
- Cook rhubarb with water and remaining 2 tablespoons of sugar until soft and syrupy. Let cool before adding to berries.
